The Best Blueberry-Lemon Teacake: #NinjaCookingSystem


Marshall's Farm Stand, one of my favorite parts of Summer in Gloucester is now open and I went by to stock up on fresh asparagus, fresh tomatoes, and blueberries--oh, how I love fresh, locally grown produce! I was trying to decide what to do with the blueberries and last night made a blueberry-lemon teabread in my Ninja 3-in-1 Cooking System that is the most delicious, moist, light one I've made so far. And it was easy, too.

BLUEBERRY-LEMON CAKE
In a bowl combine a pint of fresh blueberries, 2 tbsp. lemon juice, 2 tbsp. grated lemon peel, 1/3 cup brown sugar. Stir and let sit for 20 minutes or so to let the flavors combine. The grated lemon peel really punches up the flavor!


Add:
2 eggs
2 tbsp. coconut oil (or any cooking oil)
1 tsp. baking powder
1 cup vanilla Greek yogurt
1 cup low carb baking mix (or regular)
1 cup buttermilk baking mix (I like Pioner Brand if you can find it)
Pour into the Ninja baking pan sprayed with cooking spray. 
Add 3 cups water to the pot. Put rack in and then the pan.
Steam bake on for 30 min. @ 350°. 
So light and fluffy it is amazing!

You could put a glaze on it if you want to but it doesn't need it! The yogurt and buttermilk combine to give it such a buttery, tangy taste. I'm going to try making it with raspberries when they come in!
