Chocolate Hazelnut Banana Bread--In the #NinjaCookingSystem


Yesterday I discovered that I had 3 bananas that were riper than I like so decided it was a good day to make banana bread but I wanted to make something chocolaty, too. Just that kind of day. I cruised around the internet checking out recipes and finally cobbled one together that turned out terrific. This is what I did:

Chocolate Hazelnut Banana Bread

Mash three ripe bananas with 1/2 cup vanilla flavored Greek yogurt and 2 eggs.
Stir in:
1/4 c. organic cocoa powder
1 1/2 c. baking mix (I used low-carb but you don't have to, Bisquick is fine)
1/4 c. melted butter
1/4 c. brown sugar
1 tsp. baking powder (I find this helps with low carb mixes, you might not need it with regular)
1/2 tsp. sea salt
1. tsp vanilla

Mix well then fold in 1/2 c. chopped hazelnuts and 1/2 c. (or a little more) carob or chocolate chips.

Stir well. Add a small amount of water if needed to make it stir-able.

Pour into the Ninja baking pan that has been sprayed with cooking spray. Place on the rack in the Ninja with 3 c. of water in the bottom. Bake on Oven at 350° for 25 mins.

This came out very, very moist and delicious. I think it could be just as delicious using applesauce instead of banana if you don't want the banana taste.

I used my own home-made vanilla extract which I made by pouring vodka over several slit Madagascar vanilla beans and let steep for a couple weeks. This is the best vanilla I've ever tasted and I have a ton of it.
