Cooking With My Characters: Three Corn & Cheddar Muffins (in the Ninja!)


A few weeks ago along with authors Christine Nolfi and Patricia Sands, I co-authored a cookbook called Cooking with Our Characters. In it each of us shared five recipes with ties to characters in our books. I had such a good time doing it and I realized that most of my characters cook a lot! So I decided to build upon this theme here on my blog. Especially now that I am so in love with my Ninja 3-in-1 Cooking System.

So today I'll introduce you to Syd Jupiter from my novel, Depraved Heart. Syd grew up in New Orleans and was an NFL full back before he was convicted of the depraved heart murder of his brother-in-law. In this scene he is on parole and teaching his daughter to cook cornmeal hush puppies.
Sunday morning when I went to the kitchen for my toast and coffee. I found Syd teaching Anjelica how to make hush puppies.
Dad! You’re putting too much in,” Anjelica complained as she watched Syd sprinkle cayenne pepper into the yellow dough.
No such thing,” he said, “do you want boring old New England hush puppies? These are southern hush puppies, Sugar Plum.”
You’re so crazy,” she sighed resting her head against his left bicep as he whipped the dough with his right hand.
And your point is?”
She giggled.

I'm pretty sure Syd would love all three of these recipes:
ALMOST A MEAL CORN MUFFINS
Combine:
1 pkg. Jiffy Corn Muffin Mix
1 egg
1/3 cup milk
1 can drained whole kernel corn
½ cup shredded cheddar cheese
¼ cup each roasted red peppers, chopped, and onion, chopped.
Stir together, spoon into muffin tins sprayed with Pam, and steam bake in the Ninja at 350° for 25 minutes or in an oven until tooth pick comes out clean.

BACON-CHEDDAR CORN MUFFINS
Combine:
1 1/3 cups baking mix (like Bisquick)
2/3 cup white cornmeal
1/3 cup sugar (I use coconut palm sugar for its low glycemic index)
1 egg
2/3 cup milk
4 strips of bacon that have been cooked, drained, and crumbled or ¼ cup bacon bits
½ cup shredded white cheddar cheese
½ tsp. salt
½ tsp. pepper or to taste.
Stir together, spoon into muffin tins sprayed with Pam, and steam bake in the Ninja at 350° for 25 minutes or in an oven until tooth pick comes out clean.

CHILI-CHEESE CORN MUFFINS
Combine:
1 pkg. Jiffy Corn Muffin Mix
1 can creamed corn
1 tsp. chili powder
½ cup shredded cheddar cheese
1-2 tablespoons chopped jalapenos (optional)
If dough is too stiff moisten with a bit of milk as needed.
Stir together, spoon into muffin tins sprayed with Pam, and steam bake in the Ninja at 350° for 25 minutes or in an oven until tooth pick comes out clean.

And there you have it—three hearty, easy muffin mixes that an NFL football player from New Orleans would love.

Kathleen, I developed a mighty craving for all three of these delicious-sounding treats! My shopping list in hand, I'm off to the grocery store!
